Just because you're eating your lunch alone at home, it doesn't mean you shouldn't do your best to make it look beautiful! Today, I am having a vanilla-carrot mousse with celery and crushed walnuts (175 calories) and shredded chicken "tacos" on soy wrappers, with roasted corn and avocado (220 calories).
Nutritional stats for both dishes: 395 calories, 44 g carbs, 23 g protein, 13 g fat, 12 g fiber, 13 g sugar, 261 mg sodium.
If it's not a big secret: How do you make that mousse? I tried to google, but found nothing that looked so delicious as your image :-)
ReplyDeleteIt's pretty easy! Use these ingredients: 1 cup shredded carrots, about 25 g chopped shallots, 1/2 tbsp ginger, 1/2 cup chicken or veggie broth, 1-2 tpsp vanilla extract. Put everything except the vanilla extract in a pot, boil on medium heat for about 10-15 minutes. Add vanilla extract, season with salt, pepper and dried thyme. Put in blender and mix to a smooth puree/cream. Garnish with parsley and chopped walnuts. ;)
